Creamy Tomato Soup
Description
A sweet and creamy soup made for late summer days, it combines fresh tomatoes, herbs and butter beans.  It's particularly good sprinkled with nutritional yeast.
Ingredients
  1. Roughly 12 large tomatoes
  2. 3 cloves garlic
  3. 1 carton Oatly (oat cream)
  4. 1 can butter beans
  5. Handful fresh parsley
  6. Handful fresh basil
  7. 1 stock cube
Directions
  1. Preheat oven to 160C
  2. Wash and slice the tomatoes in half.  Place on baking tray with the garlic cloves (with skin on)
  3. Roast in oven for abbout 50 minutes
  4. Meanwhile place the stock cube, Oatly, butter beans and herbs in a saucepan and heat gently, stirring occasionally
  5. When roasted, remove tomato skins (unless you prefer to keep them on) and garlic skins
  6. Add tomato flesh and garlic to the butter beans etc., and heat through for 5-10 minutes
  7. Blend and serve hot

Vitamin A - 800% (it's not dangerous to have this amount in vegetable form)

Spanish Style Lentil & Tomato Soup with Tasty Toppings
This beautifully nutritious soup is easy to make and you can add a variety of toppings according to taste or dietary needs.  It takes inspiration from traditional Spanish flavours and delivers a filling and warming meal.  This quantity makes four generous portions.

A portion will likely fulfil your daily needs of:
Vitamin A
Iron
Manganese
...and more than half of your daily needs of:
Folate
as well as a good amount of protein and very little fat.

Toppings:
We used some finely chopped cavolo nero and sliced Tofoo spicy tomato sizzlers which we dry-fried.  Garlicky croutons would be lovely with it, too.
