Creamy Tomato Soup
Description
A sweet and creamy soup made for late summer days, it combines fresh tomatoes, herbs and butter beans. It's particularly good sprinkled with nutritional yeast.
Ingredients
- Roughly 12 large tomatoes
- 3 cloves garlic
- 1 carton Oatly (oat cream)
- 1 can butter beans
- Handful fresh parsley
- Handful fresh basil
- 1 stock cube
Directions
- Preheat oven to 160C
- Wash and slice the tomatoes in half. Place on baking tray with the garlic cloves (with skin on)
- Roast in oven for abbout 50 minutes
- Meanwhile place the stock cube, Oatly, butter beans and herbs in a saucepan and heat gently, stirring occasionally
- When roasted, remove tomato skins (unless you prefer to keep them on) and garlic skins
- Add tomato flesh and garlic to the butter beans etc., and heat through for 5-10 minutes
- Blend and serve hot
