Quinoa & Chickpea Salad
Description
A nourishing 10 Minute WFPB meal.
Ingredients
  • 1 pack ready-cooked quinoa
  • 1 pack/can of chickpeas, drained
  • 1 large red onion, chopped
  • 3 large handfuls spinach
  • 1 tsp ketchup
  • 1 tbsp pistachios, shelled
  • 1 tbsp houmous
  • Lettuce
  • Half a red pepper
Directions
  1. Dry-fry the onion for a couple of minutes
  2. Add the ketchup, then spinach
  3. Add quinoa and chickpeas
  4. Heat together for five minutes
  5. Serve up and scatter with red pepper, lettuce and pistachios
  6. Dollop a bit of houmous on top

 Quick, easy, nutritious and filling!

This dish is a gently spiced lentil and pea curry that goes beautifully with rice, potatoes or naan bread.  It's great as a lunch or when you need an ultra-fast meal as it does not require any chopping.  The spice level can be geared up or down depending on preference by changing from a mild curry powder to medium or hot.
This dish can be made even more nutritious by adding some baby spinach.

Lunch in our household has to be a quick affair.  However, during this cold weather it's so nice to have hot, freshly prepared food rather than a sandwich.

If looking to boost this meal further, you could add petits pois and broccoli.

Salad is wonderful - all that lovely raw food!  We particularly enjoy shredding red cabbage into ours.  However, when you're avoiding oily dressings, a salad can leave you hungry again too quickly.  It was with this dilemma in mind that we created this garlicky, creamy pesto style dip.
