Quinoa & Chickpea Salad
Description
A nourishing 10 Minute WFPB meal.
Ingredients
- 1 pack ready-cooked quinoa
- 1 pack/can of chickpeas, drained
- 1 large red onion, chopped
- 3 large handfuls spinach
- 1 tsp ketchup
- 1 tbsp pistachios, shelled
- 1 tbsp houmous
- Lettuce
- Half a red pepper
Directions
- Dry-fry the onion for a couple of minutes
- Add the ketchup, then spinach
- Add quinoa and chickpeas
- Heat together for five minutes
- Serve up and scatter with red pepper, lettuce and pistachios
- Dollop a bit of houmous on top
