Description
 Quick, easy, nutritious and filling!

This dish is a gently spiced lentil and pea curry that goes beautifully with rice, potatoes or naan bread.  It's great as a lunch or when you need an ultra-fast meal as it does not require any chopping.  The spice level can be geared up or down depending on preference by changing from a mild curry powder to medium or hot.
This dish can be made even more nutritious by adding some baby spinach.
 
Ingredients
1 carton Oatly cream
2 or 3 tsp curry powder (we use mild)
1 tsp dried onion powder
2 cans ready-cooked brown lentils, drained and rinsed
1 cup of peas or petits-pois
several generous dollops of ketchup
Directions
  1. Pour about a quarter of the carton of Oatly cream into a pan and heat gently
  2. Add the curry powder and onion powder.  Stir and heat for a couple of minutes
  3. Add the ketchup (be generous) and mix in
  4. Add the petits-pois/peas and the lentils
  5. Add the rest of the Oatly cream and cover with a lid.  Leave to heat through thoroughly for about 5-10 minutes, stirring regularly.  
  6. Taste test.  If it lacks flavour, add some more ketchup.
  7. Serve with rice, naan or potatoes.

Lunch in our household has to be a quick affair.  However, during this cold weather it's so nice to have hot, freshly prepared food rather than a sandwich.

If looking to boost this meal further, you could add petits pois and broccoli.
