Description
Ideal for a really rapid week-night meal or a light lunch, this dish combines raw and cooked, fresh and ready-prepared for convenience.
Ingredients
  • 1 pack ready-cooked grains (we used Merchant Gourmet Rainbow Rice with Green Lentils)
  • 1 large mushroom
  • A large handful baby kale/leaves
  • A few cherry tomatoes and slices of spring onion
  • Balsamic vinegar, soy sauce or coconut amino
Directions
  1. Heat the oven to about gas mark 6.  Sprinkle the mushroom with vinegar or soy sauce or aminos.  Bake for 10-15 minutes
  2. Heat up grain pack
  3. Wash kale, cherry tomatoes and spring onion
  4. Add cherry tomatoes to mushroom in oven to slightly heat
  5. Assemble all ingredients on plate

Cavolo nero provides a fantastic array of nutrients and borlotti beans are loaded with fibre to keep your inner-bugs happy.  We top this off with some garlic and red onion to boost the phytonutrients for a nutritious and delicious sauce.
