Quick Mix
Description
Ideal for a really rapid week-night meal or a light lunch, this dish combines raw and cooked, fresh and ready-prepared for convenience.
Ingredients
- 1 pack ready-cooked grains (we used Merchant Gourmet Rainbow Rice with Green Lentils)
- 1 large mushroom
- A large handful baby kale/leaves
- A few cherry tomatoes and slices of spring onion
- Balsamic vinegar, soy sauce or coconut amino
Directions
- Heat the oven to about gas mark 6. Sprinkle the mushroom with vinegar or soy sauce or aminos. Bake for 10-15 minutes
- Heat up grain pack
- Wash kale, cherry tomatoes and spring onion
- Add cherry tomatoes to mushroom in oven to slightly heat
- Assemble all ingredients on plate
