No-oil pesto
Description
If you're cutting out refined foods, that includes olive oil! Although it can seem strange cooking without oil at first, it gets easier - and your tastebuds will come alive. To make a completely whole foods pesto, I use some macadamia nuts to add creaminess.
Ingredients
  • 100g macadamia nuts
  • 150g cashew nuts
  • A large colander full of fresh basil and parsley
  • A sprinkling of onion granules
  • 1 clove crushed garlic
Directions
  1. Put macadamias in a processor and process until they are creamy - it won't take long
  2. Add the remaining ingredients and process or pulse until you get the texture you prefer
  3. Some people find they don't need to add any salt to this recipe, some might like to add a squeeze of lemon juice or some sun-dried tomatoes.
  4. Serve with hot pasta!

Cavolo nero provides a fantastic array of nutrients and borlotti beans are loaded with fibre to keep your inner-bugs happy.  We top this off with some garlic and red onion to boost the phytonutrients for a nutritious and delicious sauce.
