(Baked) Sweetcorn “Frittatas”
Description
A quick and easy dish that works really well with salad
Ingredients
  • 1 and a quarter mugs gram flour
  • 1 mug water
  • 1 mug sweetcorn (frozen works fine)
  • Bunch of chives, finely chopped
  • Bunch of spring onions, finely chopped
  • 2 tsp Dr Greger's Savoury Seasoning or half a tsp each of dried parsley, dried onion granules and garlic granules. Alternatively, use your favourite blend of herbs and spices.
Directions
  1. Mix all of the ingredients together thoroughly in a large bowl - ensure no pockets of unstirred flour remain.
  2. Place spoonfuls of the mixture into a silicon cup cake or muffin tray - the quantity made will depend on the size of each muffin section and how deeply you fill them. 
  3. Bake in a preheated oven (425F / 220C) for about 25 minutes (depending on how deeply filled - check regularly to ensure not burning). They are cooked when you can press them out of the muffin tray without them falling apart. You might need to loosen the edges first before turning out.

 Quick, easy, nutritious and filling!

This dish is a gently spiced lentil and pea curry that goes beautifully with rice, potatoes or naan bread.  It's great as a lunch or when you need an ultra-fast meal as it does not require any chopping.  The spice level can be geared up or down depending on preference by changing from a mild curry powder to medium or hot.
This dish can be made even more nutritious by adding some baby spinach.

Salad is wonderful - all that lovely raw food!  We particularly enjoy shredding red cabbage into ours.  However, when you're avoiding oily dressings, a salad can leave you hungry again too quickly.  It was with this dilemma in mind that we created this garlicky, creamy pesto style dip.
