(Baked) Sweetcorn “Frittatas”
Description
A quick and easy dish that works really well with salad
Ingredients
- 1 and a quarter mugs gram flour
- 1 mug water
- 1 mug sweetcorn (frozen works fine)
- Bunch of chives, finely chopped
- Bunch of spring onions, finely chopped
- 2 tsp Dr Greger's Savoury Seasoning or half a tsp each of dried parsley, dried onion granules and garlic granules. Alternatively, use your favourite blend of herbs and spices.
Directions
- Mix all of the ingredients together thoroughly in a large bowl - ensure no pockets of unstirred flour remain.
- Place spoonfuls of the mixture into a silicon cup cake or muffin tray - the quantity made will depend on the size of each muffin section and how deeply you fill them.
- Bake in a preheated oven (425F / 220C) for about 25 minutes (depending on how deeply filled - check regularly to ensure not burning). They are cooked when you can press them out of the muffin tray without them falling apart. You might need to loosen the edges first before turning out.
