10 Minute Curry
Description
Absolutely delicious! This is a really filling quick-to-make curry with chickpeas, spinach and potato.
Ingredients
- 1 medium-large potato (depending on your appetite)
- 100g cooked chickpeas (or more if you're very hungry)
- 60g spinach
- 2 tbsp ketchup
- 1-2 tbsp ground almonds
- Half a tsp curry powder - depending on how strong you like it
- Half a tsp onion powder
- Pinch garlic granules
Directions
- Microwave the potato whilst preparing the rest of the ingredients (alternatively chop and boil in a pan)
- Place ketchup and spices in a pan and heat whilst washing the spinach
- Stir in spinach
- Drain and rinse the chickpeas and add to pan
- When potato is ready, chop up and add to pan
- Combine well and then turn off heat. Add the ground almonds.
- Enjoy!
