Macadamia & Raspberry Treats - 100%
Description
These treats are best kept in the freezer until you're ready to decorate and eat them as they soften quickly at room temperature. They have a delicate flavour suitable for people who aren't fans of strong nut flavours. The dried raspberry adds a nice sharp tang to stop them from being overly sweet.Eaten at low temperatures, this could easily be mistaken for a luxury chocolate icecream.
Ingredients
- 150g dates soaked in boiling water for 20 minutes
- 150g macadamia nuts
- Half a tsp vanilla extract
- 2 tbsp cacao powder
- 1 tbsp dried raspberry pieces
Directions
- Process the nuts in a high speed processor until they get very creamy
- Add the vanilla & cacao powder
- Drain, rinse and check the dates for stones & bugs
- Add the dates to the processor
- Process together until a creamy mixture forms
- Press the mixture into moulds or roll into balls
- Freeze for at least an hour and then carefully remove from moulds. Press raspberry pieces into the top. Serve with a smile :)
