Cinnamon Biscotti
Description
It's hard to believe that these biscotti are completely whole-food plant-based. They are sweet and can be quite firm for dipping. If you want to make them harder, just allow them to cool and bake them a second time (hence the name biscotti - twice cooked).
Ingredients
- 350g Buckwheat Flour
- 150g Ground Almonds
- 150g Soaked Dates
- 2 Apples, Cored
- 2 Tsp Cinnamon
Directions
- Preheat the oven to gas mark 4.
- Chop cored apple and place in processer with soaked dates.
- Process until smooth. Gradually add flour, ground almonds and cinnamon.
- Once dough forms, place on a floured surface and shape into a loaf. Cut into into thin slices and place on baking paper on a baking sheet.
- Bake for ten minutes then turn over and bake for another ten minutes.
