Stunned in Sainsburys!

It's not meat, it's fruit:  jackfruit.  Sainsburys have been very quick to recognise the potential of young jackfruit, a completely natural, traditional food from Asia.  Unlike other meat-substitutes, it's a healthy wholefood.



Some say it's like pulled pork, others think it's like tuna.  Young jackfruit doesn't really have much of a flavour but does absorb flavours from sauces and has a really interesting texture.  It works brilliantly in sandwiches with salad and can be used in so many different ways.

We were a bit short on time yesterday evening so decided to take some short-cuts with preparing our jackfruit.  On opening the tin, you find light coloured pieces of fruit.  It's best to rinse them to remove salt etc.,  We put some ketchup and cajun seasoning in a ceramic frying pan along with some water.  Stiring the jackfruit in broke the fruit pieces up a little and then we let it stew for 15 minutes, stirring regularly.  To thicken the sauce and ensure it coated the fruit well we mixed some cornflour with water and added it to the pan.  In total, it took 20 minutes to prepare, which is about how long it took to prepare the salad to go with it.  

Its texture is perhaps not as firm as an animal product (I've never eaten pulled pork so really can't comment on the similarity) but it's an easy, versatile addition to a range of dishes. It really does take on the flavours of the sauce you choose - delicious.

Nutrition-wise, it's low in fat, low in calories and has a useful level of vitamins and minerals - most notably B6 and vitamin C.
